Nothing beats a great homemade spaghetti sauce. When it comes to vegetarian pasta sauce, the key to flavor is a good mix of vegetables.

Ingredients

  • 2 Tbsp. olive oil
  • 2 small onions, chopped
  • 2 garlic cloves, chopped
  • 1¼ cups sliced zucchini
  • 1 Tbsp. oregano
  • 1 Tbsp. basil
  • 8 oz. tomato sauce
  • 6 oz. tomato paste
  • 2 medium tomatoes, chopped
  • 1 cup water

Directions

  1. In skillet, heat oil. Sauté onions, garlic, and zucchini in oil until onions are soft (5 minutes).
  2. Add remaining ingredients and simmer, covered, until vegetables are soft and cooked down (45 minutes). Use in any recipe calling for pasta sauce.
