This tuna salad is easy to make and perfect for a quick and light summer meal. Serve as a salad on a bed of fresh greens or as a sandwich on whole grain toast.

Ingredients

  • 2 (6 oz.) cans chunk light tuna, drained
  • 1 (15 oz.) can small white beans, rinsed
  • 10 cherry tomatoes, quartered
  • 4 scallions, sliced
  • 2 Tbsp. olive oil
  • 2 Tbsp. lemon juice
  • ¼ tsp. salt
  • Pepper to taste

Directions

  1. Gently stir together all ingredients. Refrigerate, for up to 2 days, until ready to serve.
