Feta can add a lot of salty flavor, making it a great ingredient to include in a salad dressing. If you prefer little chunks of feta in your dressing, you can whisk together the dressing instead of pureeing it.

Ingredients

Feta Vinaigrette:

  • 3 Tbsp. sunflower oil
  • 3 Tbsp. olive oil
  • ¼ cup crumbled feta cheese
  • 1 Tbsp. cider vinegar
  • 1 Tbsp. red wine vinegar
  • 2 tsp. lemon juice
  • 1 tsp. pepper
  • ¼ tsp. salt

Salad:

  • 8 cups mixed salad greens
  • 2 cups sliced cucumbers
  • 1½ cups halved cherry tomatoes
  • 5 radishes, thinly sliced
  • ¼ cup thinly sliced red onion

Directions

  1. Puree vinaigrette ingredients together in a food processor or blender.
  2. Toss salad ingredients with half the vinaigrette. Serve with the remaining vinaigrette on the side.
