Simple and wholesome, this dip is the perfect accompaniment to any of your favorite whole-grain dippers, like pita bread or sliced baguette. For an even lighter option, serve with celery or endive.

Ingredients

  • 1½ lbs. carrots, peeled and sliced
  • ½ tsp. cumin
  • ¾ tsp. ground caraway seeds
  • ½ tsp. chili powder
  • ¼ tsp. salt
  • 2 Tbsp. olive oil
  • 2 Tbsp. lemon juice

Directions

  1. Steam the carrots until soft (10-15 minutes).
  2. Transfer carrots to a food processor or blender. While it’s running, pour remaining ingredients and process to desire consistency.
