If you love a hearty meat sauce but could do with fewer grains on your plate, try serving this simple tomato sauce over big mushrooms for a light but filling meal.

Ingredients

  • 4 large Portobello mushroom caps
  • 1 lb. ground turkey
  • 1½ cups Guiding Star-worthy marinara sauce
  • ¼ cup fresh basil, chopped
  • 2 cloves garlic, minced
  • ¼ tsp. salt
  • ¼ tsp. black pepper
  • ¼ cup shredded pepper jack cheese

Directions

  1. Preheat the oven to 375º F. Bake mushroom caps face-up on a silicone-lined baking sheet until soft, 15-20 minutes.
  2. In a skillet over medium heat, brown turkey. Drain grease and add sauce and spices.
  3. Set the oven to the broil setting.
  4. Fill mushroom caps with turkey mixture and top with shredded cheese. Turn broiler on and broil until cheese is melted, 2-3 minutes.
