Triple Ginger Beef Dumplings

Ginger-lovers, meet your new favorite appetizer. Dumplings are a little fussy to make, but not actually difficult, and the labor is well worth the scrumptious result.


  • Dipping Sauce:

    • ½ cup orange juice
    • ¼ cup reduced sodium soy sauce
    • ¼ cup Mirin
    • ¼ cup chopped crystallized ginger
    • 1 Tbsp. chopped green onion
    • 2 tsp. sesame seeds
    • 2 tsp. orange zest
    • 1 Tbsp. dark sesame oil


    • 4 oz. Shiitake mushrooms, chopped
    • 1 cup shredded carrots
    • 1 Tbsp. minced garlic
    • ¼ cup chopped green onion
    • 1 Tbsp. minced fresh ginger
    • ½ tsp. ground ginger
    • 1 lb. 95% lean ground beef
    • ⅛ cup reduced sodium soy sauce
    • 48 wonton wrappers


  1. Combine dipping sauce ingredients into small bowl. Set aside to let flavors combine.
  2. Heat oil in large saucepan over medium heat until hot. Add mushrooms, carrots, and garlic and cook until mushrooms start to release liquid (5 minutes).
  3. Remove saucepan from heat and add green onions, fresh ginger, and ground ginger. Cool to room temperature then mix in ground beef and soy sauce.
  4. Spoon 1 tablespoon beef filling into center of each wonton wrapper. Moisten edges of wrapper with water and bring corners up and over filling, forming a pyramid shape. Pinch edges together to seal and place on a baking sheet lined with parchment paper.
  5. Bring 1″ of water to a boil in a medium saucepan. Spray steamer basket with nonstick cooking spray. Place as many dumplings into steamer basket as will fit. Cover and reduce heat, steaming until cooked through (6-7 minutes).
  6. Serve hot with dipping sauce on the side.
