If you’re cooking fresh corn, cook a few extra ears and chill them overnight to make this easy seasonal salad. Eat it as it’s own dish or as a topping for any basic meat dish.

Ingredients

  • 4 ears corn, cooked
  • 1 Tbsp. olive oil
  • 1 Tbsp. red wine vinegar
  • 3 tomatoes, chopped
  • 1 Tbsp. Parmesan cheese
  • 1 Tbsp. chopped fresh parsley

Directions

  1. Cut kernels off cobs. Mix all ingredients together.
  2. Chill until ready to serve.
