An exquisite salsa that you will fall in love with every time. Serve it with whole grain tortilla chips as a snack. Add it to a salad in place of dressing for lunch. Toss it together to top tacos to complete dinner. Use leftovers to top scrambled eggs the next morning. This salsa will work hard all day long.

Ingredients

  • 1 large tomato, diced
  • ¼ cup red onion, diced
  • ½ jalapeño, minced
  • 2-3 Tbsp. lime juice
  • ¼ tsp. kosher salt
  • ⅛ tsp. pepper
  • ½ avocado, diced
  • ¼ cup chopped fresh cilantro
  • Cayenne to taste

Directions

  1. Stir all ingredients together. When seasoning with cayenne, keep in mind that a very little goes a long way, so start with just a pinch.
  2. Serve immediately or chill for up to 2 days.
