Peanut butter balanced with a little soy sauce for umami and salt, a little vinegar for acid, and a little honey for sweetness makes an amazing Thai-inspired sauce for noodles and veggies.

Tip: If you have any leftover sauce, the extra will keep nicely in the fridge for about a week.

Ingredients

Sauce:

  • ¾ cup natural peanut butter
  • ¼ cup cider vinegar
  • 2 Tbsp. honey
  • 2 Tbsp. low sodium soy sauce
  • ½ cup water

Noodles:

  • 1 lb. buckwheat soba noodles
  • 1 cup shredded cabbage
  • 2 carrots, shredded
  • 2 scallions, chopped
  • ¼ cup fresh cilantro
  • 2 Tbsp. toasted sesame seeds

Directions

  1. Whisk together sauce ingredients and set aside.
  2. Cook noodles according to package instructions.
  3. Toss noodles and remaining ingredients with sauce, adding the sauce a bit at a time until you’re happy with the level of moisture and flavor. Serve immediately.
