Thai Chicken Pasta Salad - 1 Guiding Stars

Enjoy a little Thai spin on a quick pasta salad! Make sure to look for peanut butter that contains only peanuts and salt: this dish doesn’t need the added sugars of many peanut butters.

Ingredients

  • 1 lb. skinless, boneless chicken breasts, cooked
  • 6 oz. buckwheat soba noodles
  • 3/4 c. natural peanut butter
  • 3/4 c. light coconut milk
  • 1/4 c. cilantro, chopped
  • 1/4 c. lime juice
  • 1 T. sugar
  • 1/2 t. salt
  • 1/4 t. cayenne pepper
  • 1 cucumber, washed and sliced
  • 6 green onions, thinly sliced

Directions

  1. Cut chicken into strips. Cook noodles according to package directions.
  2. In large bowl, whisk together peanut butter, coconut milk, cilantro, lime juice, sugar, salt and cayenne pepper until smooth.
  3. Add chicken, cucumber, and green onions to peanut butter mixture; stir to coat
  4. Drain noodles; rinse with cold water and drain. In a large bowl combine chicken mixture and noodles. Toss to combine.
