Baked sweet potatoes are a delicious treat on their own…why not turn them into a meal with the help of a delicious black bean salsa?

Ingredients

  • 4 sweet potatoes
  • 1 (15 oz.) can low-sodium black beans, rinsed and drained
  • 2 tomatoes, diced
  • 1 Tbsp. olive oil
  • 1 tsp. cumin
  • 1 tsp. coriander
  • ½ tsp. salt
  • ¼ cup reduced-fat sour cream
  • ¼ cup chopped fresh cilantro

Directions

  1. Preheat oven to 425ºF. Pierce sweet potatoes and bake until tender (1 hour).
  2. Combine beans, tomatoes, oil, cumin, coriander, and salt in a small saucepan. Heat through.
  3. Slash each sweet potato lengthwise, press open to make a well in the center, and spoon the bean mixture into the well. Top each with a dollop of sour cream and a sprinkle of cilantro.
