This salad has a southwestern flavor that meshes wonderfully with sweet potato and quinoa. Avocado provides creaminess for a balanced dish that is thoroughly nommable.

Ingredients

  • 1 cup uncooked quinoa
  • 2 medium sweet potatoes (about 1 lb.), peeled and diced into ½" pieces
  • 1 red bell pepper, cored and diced
  • 3 Tbsp. minced green onion
  • 1 cup sliced black olives
  • 1 avocado, diced
  • ¼ cup minced fresh cilantro, divided
  • 2 Tbsp. extra virgin olive oil
  • 2 Tbsp. freshly squeezed lime juice
  • ¼ tsp. chipotle chili powder
  • ½ cup diced cherry tomatoes
  • ⅛ tsp. salt
  • freshly ground pepper, to taste

Directions

  1. Combine quinoa and 2 cups of water in a medium saucepan. Bring to a boil, and then reduce heat to a gentle simmer. Cook, stirring occasionally until water is absorbed and grain is tender (15-20 minutes). Let cool slightly.
  2. Cover sweet potatoes with water in a medium saucepan and bring to boil. Cook until tender (15 minutes). Drain well and cool slightly.
  3. Toss together the potatoes, quinoa, red bell pepper, green onion, olives, avocado, and cilantro.
  4. Whisk the oil, lime juice, and chili powder together then toss the salad with the mixture. Garnish with cilantro and cherry tomatoes. Serve warm with tortilla chips.
