Spiced sweet potato cookies you can eat without guilt will bring new delight to your afternoon snacktime. For a more decadent treat, stir in a quarter cup of dark chocolate chips.

Ingredients

  • 2 cups oat flour
  • 1 tsp. baking soda
  • ¼ tsp. salt
  • ½ tsp. cardamom
  • 1 tsp. ground cinnamon
  • ¾ cup sweet potato, mashed
  • ½ cup canola oil
  • ¾ cup light, unsweetened coconut milk
  • ½ ripe banana, mashed
  • 2 egg whites

Directions

  1. Preheat oven to 350º F.
  2. Stir together dry ingredients. Mix wet ingredients and beat together with dry ingredients.
  3. Spoon batter onto a cookie sheet. Bake for 20-22 minutes, until cookies are golden brown. Cool on a wire rack.
