Ingredients

  • Salad:
  • 16oz Hannaford ruffles pasta (1 box cooked following instructions on box and cooled completely)
  • Add:
  • 1 jalapeno seeded and pretty finely chopped
  • 1 can of black beans with chili (do not drain) (7227313318)
  • 1 can of Crisp 'n Sweet corn (drained, 1.5 cups)
  • ¼ - ½ cup cilantro chopped
  • 1 cup Cabot Habanero cheese cut in 1/2 " cubes or you can use Pepperjack for less heat
  • Dressing:
  • Mix the following ingredients until well blended:
  • 3 tablespoons white wine vinegar
  • 3 tablespoons cider vinegar
  • 2 teaspoons sugar
  • 2 teaspoons Dijon mustard
  • ¼ cup honey
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • 1 ½ teaspoons chili powder
  • 1 ½ teaspoons ground cumin
  • ½ cup lite Extra virgin olive oil

Directions

Pour dressing over salad and blend to coat evenly (does not necessarily use the full amount of the dressing).  The flavors are enhanced if it sets overnight but it is not a requirement.  If it does set overnight you may need to add more dressing as the pasta will absorb some.
