
Looking for a perfect dish for brunch? This simple oatmeal pie will do the trick! Want to get a little adventuresome with the flavor? Chiffonade a few fresh basil leaves and sprinkle on top of the strawberries.
Ingredients
- 2 cups old-fashioned oats
- 1 tsp. baking powder
- 1 Tbsp. brown sugar
- ¼ tsp. kosher salt
- 1 cup skim milk
- 1 egg
- ½ cup plain, fat-free Greek yogurt
- ½ tsp. vanilla extract
- 2 cups strawberries, sliced
- 1 Tbsp. unsweetened shredded coconut
Directions
- Preheat oven to 375ºF. Spray a pie pan with non-stick cooking spray.
- In a large bowl, combine dry ingredients.
- In a separate bowl, whip together wet ingredients.
- Mix wet ingredients into dry. Pour mixture into pie pan.
- Arrange strawberries on top of the oat mixture. Sprinkle with coconut.
- Bake for 35 minutes until middle is set and edges begin to brown.
