Rosemary, onion, and chicken stock take these potatoes from simple side to an elegant dish that would shine at any dinner party.

Ingredients

  • 3 lbs. new potatoes
  • 2 cups chicken stock
  • 2 onions, quartered
  • 2 Tbsp. chopped fresh rosemary
  • 3 Tbsp. olive oil
  • Pepper to taste

Directions

  1. Place all ingredients in a large, heavy-bottomed pot, cover, and bring to a simmer over medium-high heat until potatoes are tender (10-15 minutes).
  2. Remove the lid and continue cooking until liquid cooks down. Smash potatoes slightly and continue to cook until golden brown (3-4 minutes).
