Spinach-Carrot Muffins

Breakfast just got a delicious infusion of vegetables with muffins that will give you a healthy, gluten-free option that’s ready to grab if your morning doesn’t leave you much time to cook or eat.

Ingredients

  • 1 cup buckwheat flour
  • 1/3 cup cornmeal
  • 1 teaspoon baking powder
  • 3 tablespoons flax seeds, ground
  • 1/2 teaspoon salt & pepper
  • 1/2 teaspoon nutmeg
  • 3 eggs
  • 1 cup plain, non-fat yogurt
  • 2 cups fresh spinach, chopped
  • 2 carrots, grated
  • 1 onion, grated
  • 1/2 lemon, juice and zest
  • 1 clove garlic, diced
  • 1/4 cup pumpkin seeds

Directions

  1. Preheat the oven to 350 Degrees Fahrenheit. Mix all the dry ingredients in a bowl and set aside.
  2. Whip egg and yogurt in another bowl. Add spinach, carrots, onion, lemon and garlic. Stir well and  add all the dry ingredients.
  3. Divide between 12 muffin cups, top with pumpkin seeds and bake for 25 minutes.
