Breakfast just got a delicious infusion of vegetables with muffins that will give you a healthy, gluten-free option that’s ready to grab if your morning doesn’t leave you much time to cook or eat.
Ingredients
- 1 cup buckwheat flour
- 1/3 cup cornmeal
- 1 teaspoon baking powder
- 3 tablespoons flax seeds, ground
- 1/2 teaspoon salt & pepper
- 1/2 teaspoon nutmeg
- 3 eggs
- 1 cup plain, non-fat yogurt
- 2 cups fresh spinach, chopped
- 2 carrots, grated
- 1 onion, grated
- 1/2 lemon, juice and zest
- 1 clove garlic, diced
- 1/4 cup pumpkin seeds
Directions
- Preheat the oven to 350 Degrees Fahrenheit. Mix all the dry ingredients in a bowl and set aside.
- Whip egg and yogurt in another bowl. Add spinach, carrots, onion, lemon and garlic. Stir well and add all the dry ingredients.
- Divide between 12 muffin cups, top with pumpkin seeds and bake for 25 minutes.
