A luscious, Asian-style peanut sauce is the perfect way to perk up green beans to take them from a simple side to a genuine treat. Make extra—they reheat nicely and make a fantastic snack.

Ingredients

  • 1 lb. green beans, trimmed
  • 2 Tbsp. natural peanut butter
  • 2 Tbsp. reduced sodium tamari
  • 1 Tbsp. toasted sesame oil
  • 1 Tbsp. water
  • 2 Tbsp. peanut oil
  • 1 clove garlic, minced
  • 1 tsp. minced fresh ginger
  • ½ tsp. red pepper flakes, or to taste

Directions

  1. Steam the green beans just until tender (4-5 minutes). Rinse under cold water immediately and set aside.
  2.  In a small bowl, combine the peanut butter, tamari, sesame oil, and water. Set aside.
  3. Heat the peanut oil in a large skillet over medium-high heat. Add the garlic, ginger, and red pepper flakes and cook until fragrant (30 seconds).
  4. Add the beans to the skillet and cook until lightly browned (2-3 minutes). Add peanut butter mixture and toss to coat.
