You can use this salsa as a dip for tortilla or pita chips or use it as a topping for rice, beans, fish, burritos, burgers, chicken… you get the idea. Anywhere you’ve got a summer celebration going on, there’s sure to be a use for this simple, versatile salsa.

Tip: If you’d like to make this ahead, prep everything but the avocado in advance and add the avocado right before serving.

Ingredients

  • 2 cups corn
  • ¼ cup diced avocado
  • ½ cup minced red onion
  • 2 Tbsp. minced tomato
  • 2 Tbsp. jalapeño peppers
  • 2 Tbsp. lime juice
  • 2 tsp. sugar
  • 1 Tbsp. red wine vinegar

  1. Combine all ingredients.
