This hearty soup takes little work, and with a delightful array of Indian spices, it’s sure to impress your family with its complex flavors. Serve with a side of whole-grain bread.

Ingredients

  • 2 cans no-salt-added black eyed peas, drained
  • 1 carrot, sliced
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 1 jalapeno, minced
  • 1 medium sweet potato, peeled and diced
  • 2 cups collard greens, chopped
  • 1 (15 oz) can low-sodium diced tomatoes
  • 3 cloves garlic, minced
  • 5 cups low-sodium vegetable broth
  • 2 tablespoons curry powder
  • 1 teaspoon cumin
  • 2 teaspoons garam masala
  • 1/2 teaspoon cinnamon
  • 1 teaspoon fresh ginger, grated
  • 1/2 teaspoon of salt

Directions

  1. In a large soup pot, cook onion, pepper and carrots together until onions are translucent.
  2. Add remaining ingredients, cover and bring to a boil. Turn to a simmer and cook until sweet potatoes are tender.
