Ingredients
- 2 cans no-salt-added black eyed peas, drained
- 1 carrot, sliced
- 1 onion, diced
- 1 red bell pepper, diced
- 1 jalapeno, minced
- 1 medium sweet potato, peeled and diced
- 2 cups collard greens, chopped
- 1 (15 oz) can low-sodium diced tomatoes
- 3 cloves garlic, minced
- 5 cups low-sodium vegetable broth
- 2 tablespoons curry powder
- 1 teaspoon cumin
- 2 teaspoons garam masala
- 1/2 teaspoon cinnamon
- 1 teaspoon fresh ginger, grated
- 1/2 teaspoon of salt
Directions
- In a large soup pot, cook onion, pepper and carrots together until onions are translucent.
- Add remaining ingredients, cover and bring to a boil. Turn to a simmer and cook until sweet potatoes are tender.
