This dessert happens to be vegan and gluten-free…and also completely delicious. Take advantage of the availability of cranberries to enjoy this as a decadent holiday treat.

Ingredients

  • 2 cups apples, sliced
  • 2 cups pear, sliced
  • 1½ cups cranberries
  • 1 (15 oz.) can pineapple chunks in 100% juice, juice reserved
  • 1 Tbsp. lemon juice
  • ¼ cup brown sugar
  • 1 tsp. cinnamon
  • ¼ tsp. nutmeg
  • ¼ cup olive-oil based butter substitute, melted
  • 1 cup walnuts, chopped

Directions

  1. Preheat oven to 300ºF.
  2. Toss the fruit with the lemon juice.
  3. Whisk together reserved pineapple juice, brown sugar, cinnamon, nutmeg, and melted butter substitute until the sugar is dissolved.
  4. Toss fruit with sugar mixture and pour into a 9″x12″ baking dish.
  5. Top with walnuts and bake until fruit is tender and sauce has reduced (1 hour).
