Rice salads make excellent lunches. The hearty grains absorb flavors as they sit in the fridge and don’t get soggy as green salads can. This simple flavor profile is easy to make from pantry ingredients.

Tip: Cooling rice properly before storing is important for food safety, so don’t skip the step of spreading the rice out to cool it.

Ingredients

  • 1 cup brown rice
  • ¾ cup pico de gallo
  • ½ tsp. chipotle chili pepper
  • 1 (15 oz.) can black beans
  • Juice of ½ lime
  • 1 avocado, peeled and diced

Directions

  1. Cook rice according to package directions (45 minutes). Spread on a baking sheet and refrigerate to cool (15 minutes).
  2. Gently mix together all ingredients.
