Creamy butter beans are a well-known treat in the south, but you can find them under the name of large lima beans outside of the south. Serve with a side of unsweetened cornbread and enjoy!

Ingredients

  • 1 lb. large lima beans
  • 1 Tbsp. vegetable oil
  • ½ cup diced onion
  • ½ cup diced celery
  • ¼ cup diced carrot
  • 2 cloves garlic, minced
  • 1 tsp. thyme
  • ¼ tsp. pepper
  • 2 cups cubed ham
  • 4 cups low-sodium chicken stock
  • ⅛ tsp. salt-free Cajun seasoning

Directions

  1. Place the beans in a slow cooker.
  2. Heat a skillet over medium-high heat. Add the oil, onion, celery, carrots, and garlic. Sauté until onion is just tender (5-8 minutes).
  3. Add the vegetable mix and all of the remaining ingredients to the slow cooker. Add water as needed to cover the beans plus an inch.
  4. Cover and cook on LOW for 6-8 hours or on HIGH for 4-6. Check halfway through and add more water if needed to keep the beans from drying out. Beans are done when tender to the bite.
