Ingredients

  • 1 1/2 lbs. boneless, skinless chicken breasts
  • 1 (14.5 oz.) can no-salt-added diced tomatoes
  • 1 c. low-sodium chicken stock, divided
  • 2 t. chili powder
  • 1 t. salt
  • 1 t. cumin
  • 1 c. brown rice
  • 1 (15 oz.) can no-salt-added black beans, drained and rinsed
  • 1 c. frozen corn

Directions

  1. Combine chicken, tomatoes, half of stock and spices in a 3 1/2-quart slow cooker. Add water if needed to cover chicken. Cover slow cooker and set on LOW 3 to 4 hours.
  2. Add the rice, beans, corn and remaining chicken broth. Continue cooking on low for 3 to 4 hours.
  3. Shred the chicken evenly with forks and serve with your favorite burrito toppings.
