Crispy veggies with cold pasta and a luscious dressing combine for a dish that’s wonderful as a side to any protein or on its own as a vegetarian lunch. If you want to make a meal of it, consider adding a hard-boiled egg or some steamed edamame to the dish to round out the protein.

Ingredients

Dressing:

  • 1 Tbsp. peanut butter
  • 2 Tbsp. lite soy sauce
  • 1 tsp. sesame oil
  • 3 garlic cloves, minced
  • 1 tsp. grated fresh ginger

Salad:

  • 2 cups cooked thin spaghetti
  • ½ cup thinly sliced pepper
  • ½ cup thinly sliced carrots
  • ¼ cup minced scallions
  • ¼ cup bean sprouts
  • Red pepper flakes to taste

Directions

  1. Combine dressing ingredients in a small saucepan. Bring the mixture to a boil, lower the heat, and simmer until slightly thicker (3-5 minutes).
  2. Toss salad ingredients together with warm dressing to coat.
  3. Chill and serve cold.
