This recipe is the taste of fall in a savory meal. Juicy apples perfectly sauce tender chicken while red peppers play counterpoint to the flavor. Serve over a bed of steamed or braised greens or with a side of mashed sweet potatoes.

Ingredients

  • 1 lb. skinless, boneless chicken breasts
  • ⅛ tsp. salt
  • 2 bell peppers, chopped
  • 1 cup apple juice
  • ¼ cup onion, chopped
  • ½ tsp. sage
  • 2 cloves garlic, minced
  • ¼ tsp. pepper
  • 4 tsp. water
  • 1 Tbsp. cornstarch
  • 2 Granny Smith apples, sliced

Directions

  1. Coat a large nonstick skillet with cooking spray. Heat over medium-high heat. Sprinkle chicken with salt. Cook chicken, flipping halfway through, until it reaches a minimum internal temperature of 165ºF (8-10 minutes). Remove chicken from skillet and set aside.
  2. Add peppers, juice, onion, sage, garlic, and pepper to skillet. Bring to a boil. Reduce heat and simmer, covered, until vegetables are tender (2-3 minutes).
  3. In a small bowl, combine water and cornstarch. Stir in apples. Cook and stir until thickened and bubbly (2-3 minutes). Return chicken to skillet and heat through to serve.
