Ingredients

  • 4 sweet potatoes, peeled and cubed
  • 1 red onion, chopped
  • ¼ cup olive oil, divided
  • ¼ tsp. salt
  • Pepper to taste
  • 2 Tbsp. minced hot pepper
  • 1 clove garlic, peeled
  • Juice of 2 limes
  • 2 cups cooked black beans
  • 1 bell pepper, seeded and diced
  • 1 cup chopped fresh cilantro

Directions

  1. Preheat oven to 400ºF. Toss sweet potatoes and onions with ⅛ cup oil on a large baking sheet. Sprinkle with salt and pepper. Roast, turning occasionally, until potatoes are tender (30-40 minutes).
  2. While potatoes are cooking, blend pepper, garlic, lime juice, and remaining ⅛ cup olive oil in a food processor or blender.
  3. Toss sweet potatoes, onions, beans, and bell pepper in a large bowl with with dressing and cilantro.
