The simple delights of garlic, tomatoes, and good olive oil are brought together gently by a slow roasting process to deepen and meld the flavors.

Ingredients

  • 2 lbs. plum tomatoes, halved and cored
  • 3 cloves garlic, minced
  • 1 Tbsp. olive oil

Directions

  1. Preheat oven to 275ºF. Place tomatoes cut-side up on a shallow baking pan. Drizzle with oil and sprinkle garlic over tomatoes.
  2. Bake, uncovered, until soft (2 hours).
