This dinner is quick and easy and scrumptious. Roasting gnocchi gives it a nice crispy exterior that you’ll love. You can use fresh, frozen, or shelf-stable interchangeably for this recipe.


  • 1 lb. gnocchi
  • 2 bell peppers, chopped
  • 1 pint grape tomatoes
  • 1 red onion, chopped
  • 4 cloves garlic, crushed
  • 1 tsp. rosemary
  • ¼ tsp. salt
  • ¼ tsp. pepper
  • 2 Tbsp. olive oil
  • 2 Tbsp. sliced fresh basil


  1. Preheat oven to 450°F. Line a rimmed baking sheet with parchment paper.
  2. Place all ingredients except basil in a large bowl. Toss to combine and spread the mixture evenly on the baking sheet.
  3. Roast, stirring halfway through, until the gnocchi are toasted and the vegetables are caramelized (18-20 minutes).
  4. Serve hot, garnished with basil.
