Quinoa-stuffing is a gluten-free option that makes these flavorful hors d’oeuvres a delightful choice for a party with new friends. Delicious and safe for most food allergies, these will help you turn new friends into good friends.


  • 2 tablespoons olive oil
  • 1 shallot, diced
  • 24 button mushrooms
  • 3 cloves garlic, minced
  • 1 teaspoon rosemary
  • 3/4 cup roasted red peppers, diced
  • 1/2 cup baby spinach, shredded
  • 1/2 cup quinoa, cooked
  • 1 tablespoon white wine vinegar
  • 1/4 cup Parmesan cheese


  1. Preheat oven to 350 Degrees Fahrenheit.
  2. Heat oil in a large sauté pan. Cook shallot until translucent.
  3. Remove mushroom caps, dice the stems. Add mushroom stems, garlic and rosemary. Cook auntil liquid from mushroom evaporates.
  4. Stir in the peppers, spinach and quinoa.  Sprinkle with vinegar and cook until absorbed.
  5. Stir in cheese and spoon filling into mushroom caps. Place on the baking sheet, and bake for 30 minutes. Serve warm.
