A great way to start your autumn day. If you enjoy steel cut oats but never have the time, try swapping the rolled oats for steel cut and make this spicy fall recipe in a slow cooker to wake up to a memorable smell.

Ingredients

  • 1 Tbsp. raisins
  • ¼ cup pumpkin puree
  • ½ tsp. cinnamon
  • ½ cup oatmeal
  • ¼ cup water
  • 1 cup skim milk, divided

Directions

Stovetop

  1. Combine raisins, cinnamon, pumpkin, oatmeal, water, and ¾ cup milk in saucepan. Bring to a boil over medium-high, turn heat to low, and simmer, stirring often, until oats are tender (5 minutes).
  2. Stir well. Serve with remaining ¼ cup milk.

Microwave

  1. Combine raisins, cinnamon, pumpkin, oatmeal, water, and ¾ cup milk in microwave-safe dish. Microwave on high until tender and liquid is absorbed (2-3 minutes).
  2. Stir well. Serve with remaining ¼ cup milk.
