This pumpkin-packed variation on the popular blender waffles is a perfect fall brunch. Top with a little peanut butter or serve with a side of warm, unsweetened applesauce for dipping. Sweet potato puree also makes a slightly sweeter alternative to pumpkin.

Tip: For reheating or just for extra crispy waffles, these can be toasted in a regular toaster.


  • 3 eggs
  • 1 cup rolled oats
  • 1 cup pumpkin puree
  • ½ tsp. pumpkin spice


  1. Preheat your waffle iron.
  2. Add all ingredients to a blender and puree together thoroughly.
  3. Spoon into waffle iron and cook according to waffle maker directions.
