These little bite-sized potato puffs bring plenty of flavor to the table. The recipe works best with sticky potatoes like Yukon golds. If you eat them right out of the oven, you may find them to be a little explosive, but let them sit for 20 minutes before serving and you’ll have a tasty tidbit suitable for any affair de hors d’oeuvre.

Ingredients

  • 1 lb. potatoes, peeled and quartered
  • ½ cup chives, finely chopped
  • ½ tsp. salt
  • Pepper to taste
  • ½ cup wheat germ
  • ½ tsp. paprika

Directions

  1. Cover potatoes with water and boil until soft (30 minutes). Take off heat and let potatoes cool throughly. Mash, adding chives, salt, and pepper. Refrigerate for 30 minutes.
  2. Preheat oven to 375ºF.
  3. Shape potato into 1-inch balls. Mix the paprika and wheat germ together in a dish and roll potato balls in mixture until coated.
  4. Coat a baking sheet with cooking spray. Place potato pearls onto baking sheet and bake until hot and crispy (25 minutes). Serve hot.
