Millet is a fantastic grain to roll into your diet, and this salad is a gorgeous way to do it. Pomegranate is a perfect flavor to enjoy during the fall, when it’s in season, although some stores offer the seeds independently for longer than the whole fruits are available.

Ingredients

  • ½ cup millet, cooked
  • 4 cups arugula
  • Seeds of one pomegranate
  • 1½ Tbsp. fresh mint leaves, chopped
  • ¼ cup unsalted almonds
  • ½ tsp. black pepper

Cashew Dressing:

  • ¾ cup unsalted cashews
  • 6 Tbsp. olive oil
  • 3 Tbsp. lemon juice
  • 2 cloves garlic
  • ¼ tsp. salt

Directions

  1. Combine all the ingredients a bowl, except the dressing.
  2. Combine dressing ingredients in a food processor, blending until creamy.
  3. Serve with dressing.
