This classic Filipino stew is meant to be served over rice. We recommend brown rice. If you’re using regular brown rice, which has a long cook time, get that starting before you begin the picadillo to have them be ready at roughly the same time. Instant brown rice is also a great option, and takes a fraction of the time.

Ingredients

  • 1 Tbsp. olive oil
  • 1 medium yellow onion, diced
  • 2 cloves garlic, crushed and minced
  • 1 medium tomato, diced
  • 4 Tbsp. fish sauce, divided
  • 1 lb. ground turkey
  • 2 tsp. Worcestershire sauce
  • 4 thyme stems
  • 1 bay leaf
  • 3 parsley stems
  • 1 celery stalk, cut in half
  • 3 medium potatoes, peeled and diced
  • 4 small carrots, diced
  • 1 medium red bell pepper, diced
  • 1 (15 oz.) can no-salt-added tomato sauce
  • 1 cup raisins
  • 1 cup edamame

Directions

  1. Heat olive oil in a large sauce pan over medium heat. Add onions and cook until translucent (4-5 minutes). Add garlic and cook until browning (1-2 minutes).
  2. Add tomato and a splash of water. Crush the tomatoes as the cook. When the water has almost evaporated (3-5 minutes), add half of the fish sauce and scrape the pan as you stir.
  3. Add the ground meat, breaking it apart as you do. Add Worcestershire sauce, about a cup of water, thyme, bay leaf, parsley and celery. Cover and bring to a boil.
  4. Turn heat down to medium-low. Add the potatoes and carrots. Cover and simmer until tender.
  5. Add bell pepper and tomato sauce. Stir, cover and cook at medium heat for 4-5 minutes.
  6. Turn heat to medium low. Add raisins and edamame. Stir, cover and and cook for about 2 to 3 minutes until all vegetables are soft and the flavors have come together. Stir in the rest of fish sauce.
