Fennel has a mild, sweet licorice flavor like the herb and seeds of the same name. It works beautifully with bitter greens and sweet pears in this salad.

Tip: To toast walnuts, spread on a baking sheet and bake at 350ºF until golden brown and fragrant, stirring once or twice (5-7 minutes).

Ingredients

  • 6 cups mixed salad greens
  • 1 fennel bulb, thinly sliced
  • 2 pears, thinly sliced
  • 2 Tbsp. grated Parmesan cheese
  • ¼ cup chopped toasted walnuts
  • 3 Tbsp. olive oil
  • 2 Tbsp. balsamic vinegar
  • Pepper to taste

Directions

  1. Top greens with fennel, pears, cheese, and walnuts.
  2. Drizzle with olive oil and vinegar. Top with pepper to serve.
