This is a big recipe suitable for the holidays or when you have a lot of squash on hand. You could swap out the garlic and parsley for sweeter spices like cinnamon or ginger.

Ingredients

  • 5 lbs. winter squash, peeled, seeded and cubed
  • 2 Tbsp. olive oil, divided
  • 1 tsp. salt
  • ¼ tsp. pepper
  • 3 cloves garlic, minced
  • 2 Tbsp. chopped parsley

Directions

  1. Preheat oven to 375°F.
  2. Toss squash with 4 teaspoons of oil, salt, and pepper. Spread evenly on a large baking sheet. Roast, stirring occasionally, until tender throughout (30-45 minutes).
  3. Heat the remaining 2 teaspoons of oil in a small skillet over medium heat. Add garlic and cook, stirring, until fragrant (1 minute). Toss the roasted squash with garlic, oil, and parsley.
