Bright citrus flavor highlights the natural sweetness of roasted carrots in this simple and delightful dish. If you can find rainbow carrots at your local farmer’s market, the lovely array of colors would bring extra visual delight to this simple side.

Ingredients

  • 2 lbs. carrots
  • Juice from 1 orange
  • 2 mandarin oranges, peeled and segmented
  • 2 Tbsp. olive oil
  • ⅛ tsp. salt
  • ½ tsp. black pepper
  • 1 tsp. rosemary

Directions

  1. Preheat oven to 375ºF. Line a baking sheet with parchment paper.
  2. Toss carrot slices with juice, mandarin segments, oil, salt, pepper and rosemary.
  3. Bake until carrots are tender (25 to 30 minutes).
