Sheet-pan dinners are a fantastic way to feed the family a hot, filling meal without making a ton of dishes. This Tuscan-flavored chicken dish can easily be scaled up or down. If you’re scaling this beyond four servings, split the servings between two baking sheets.


  • 2 boneless, skinless chicken breasts
  • Cooking spray
  • 1 tsp. lemon juice
  • ¼ tsp. Italian seasoning
  • 1 cup halved Brussels sprouts
  • 1 cup grape tomatoes
  • 4 cloves garlic, crushed
  • 2 Tbsp. olive oil
  • 4 Tbsp. balsamic vinegar
  • ¼ tsp. salt
  • ¼ tsp. crushed red pepper


  1. Preheat oven to 375ºF.
  2. Spray baking sheet with cooking spray.
  3. Place chicken on the baking sheet. Cover with cooking spray, lemon juice, and Italian seasoning. Toss together the remaining ingredients and add to the pan.
  4. Bake until veggies are softened and chicken reaches a minimum internal temperature of 165ºF, stirring veggies halfway through (30 minutes). Serve hot.
