Bulgur is sometimes sold as cracked wheat, and the two can be used interchangeably with minor modifications to cook times. Be sure to check the package instructions. Bulgur is a pre-cooked version of cracked wheat and so has the shorter cooking time.

Tip: Although this will look nicer with white balsamic vinegar, regular balsamic will also taste wonderful.

Ingredients

  • 1 cup bulgur
  • 1 cup boiling water
  • 1½ cups thinly sliced nectarines
  • ½ cup thinly sliced green onions
  • ¼ cup chopped fresh parsley
  • 1 Tbsp. chopped fresh dill
  • 3 Tbsp. olive oil
  • 3 Tbsp. white balsamic vinegar
  • ¾ tsp. salt
  • ¼ tsp. pepper
  • 3 Tbsp. chopped pistachios

Directions

  1. Combine bulgur and boiling water in a large bowl. Cover and let stand (1 hour).
  2. Stir in nectarines and remaining ingredients except for nuts. Toss well. Sprinkle with nuts to serve.
