Mustard is a beautiful condiment for roasting vegetables. It brings salt, vinegar, and of course, its characteristic mustiness to the plate for a lovely balance to great herbs and sweetly-roasted veg.

Ingredients

  • 12 oz. asparagus, trimmed and halved
  • 2 tsp. olive oil
  • 1 tsp. Dijon mustard
  • ½ tsp. chopped fresh rosemary
  • 1 tsp. lemon zest
  • Pepper to taste

Directions

  1. Preheat oven to 425ºF. Line a rimmed baking sheet with parchment paper.
  2. Toss the asparagus with remaining ingredients on the baking sheet until combined. Roast until tender (10-12 minutes). Serve immediately.
