Peanut butter and warm spices bring the flavors of northern Africa to an otherwise classic tomato soup. Lightly sweet and nicely balanced for acidity, this tomato soup might just become your new go-to recipe.

Ingredients

  • 1 Tbsp. olive oil
  • 2 onions, chopped
  • 2 cloves garlic, minced
  • 2 Tbsp. brown sugar
  • 2 tsp. chili powder
  • 1 tsp. cumin
  • ½ tsp. pepper
  • ¼ tsp. salt
  • ¼ tsp. cayenne
  • 1 pinch cinnamon
  • 1 (14.5 oz.) can no-salt-added diced tomatoes
  • 2½ cups water
  • ¼ cup tomato paste
  • 1 Tbsp. red wine vinegar
  • ⅓ cup red lentils
  • ¾ cup peanut butter

Directions

  1. Heat olive oil in a large, heavy-bottomed pot on medium heat. Add in onions, garlic, sugar, chili powder, cumin, pepper, salt, cayenne, and cinnamon. Cook until fragrant (2 minutes).
  2. Add in remaining ingredients except for peanut butter. Simmer on medium-low until lentils are cooked through (30-45 minutes).
  3. Add in peanut butter and blend either using an immersion blender or working in small batches in a standard blender with the vent hold open and loosely covered with a kitchen towel.
  4. Serve hot.
