The spinach in these muffins is not enough to give the muffins a vegetable flavor, but it does impart a little extra nutrition and a brilliant green color. They are lightly sweet and cinnamon-y, and your kids will love them.

Ingredients

  • 2 cups whole-wheat flour
  • 1½ tsp. cinnamon
  • 2 tsp. baking powder
  • ½ tsp. baking soda
  • ¼ tsp. salt
  • ¾ cup skim milk
  • ½ cup unsweetened applesauce
  • 1 banana
  • 6 oz. spinach
  • ½ cup olive oil
  • 1 egg
  • 1 tsp. vanilla extract

Directions

  1. Preheat oven to 350ºF. Spray a muffin pan with cooking spray or line with muffin cups. You’ll need 18.
  2. In a large bowl, whisk together flour, cinnamon, baking powder, baking soda, and salt.
  3. In a blender or food processor, puree all remaining ingredients.
  4. Fold puree into the dry ingredients until just combined.
  5. Divide the batter evenly into the muffin cups, and bake until firm to the touch (18-22 minutes).
