Mojo sauces vary across cultures but tend to share in common olive oil, citrus juice, herbs, garlic, and various spices. This one will appeal to lovers of cumin. For a treat, buy fresh cumin and grind it yourself in a spice grinder or mortar and pestle.

Tip: If you choose to use bamboo skewers, soak them in water for 10 minutes before threading with meat and vegetables.

Ingredients

Mojo Sauce:

  • ¼ cup orange juice
  • ¼ cup lime juice
  • 3 tbsp. chopped fresh oregano
  • 3 tbsp. olive oil
  • 2 tbsp. chopped fresh parsley
  • 1 tsp. cumin
  • 1 tsp. minced garlic
  • ¾ tsp. salt

Kebabs:

  • 1 lb. boneless beef top sirloin steak, cut into 16 cubes
  • 1 tsp. pepper
  • 1 lime, cut into 8 wedges
  • 1 red onion, cut into 8 wedges
  • 10 oz. cherry tomatoes

Directions

  1. Preheat grill to medium.
  2. Season beef cubes with pepper.
  3. Alternately thread beef with lime and onion wedges evenly onto 4 skewers. Thread tomatoes evenly onto 4 skewers.
  4. Place kebabs on grill. Grill tomato kebabs until slightly softened, turning once (2-4 minutes). Grill beef to desired doneness, turning occasionally (8-10 minutes).
  5. While kebabs cook, whisk sauce ingredients together in a small bowl.
  6. Serve kebabs drizzled with sauce.
