Sitting overnight allows the chia seeds to turn the liquid to gel and the dates to soften enough to blend nicely. If mocha isn’t your beat, consider other flavor combinations like fruit and nuts and play around with more nutritious approaches to sweet treats.

Tip: The amount of cocoa in this recipe produces a very dark chocolate flavor. If you like a sweeter chocolate, start with less cocoa powder and adjust to taste.

  • ½ cup chia seeds
  • 1½ cup unsweetened vanilla almond milk
  • ½ cup brewed coffee, cooled
  • 6 dates, pitted
  • ⅓ cup cocoa powder
  • 1 tsp. vanilla extract
  • 1 tsp. instant espresso powder

  1. Combine chia seeds, almond milk, coffee and dates. Stir. Refrigerate at least 8 hours, or overnight.
  2. Blend the chilled ingredients until smooth.
  3. Add in the cocoa powder, vanilla, and espresso powder. Blend until smooth.
