Warm rice salad is amazing with perfectly cooked basmati rice. The fragrant and delicate texture works perfectly with the rich sweetness of sun-dried tomatoes, the earthy umami of feta cheese, and the crisp finishing note of mint.

Ingredients

  • 2 sun-dried tomatoes, packed without oil
  • ¼ cup hot water
  • 1¼ cups uncooked basmati rice
  • 2 cups water
  • ⅔ cup (2½ oz.) feta cheese, crumbled
  • ½ tsp. salt
  • 2 Tbsp. dried currants
  • 2 Tbsp. chopped fresh mint
  • 1 Tbsp. olive oil
  • ¼ tsp. black pepper
  • 2 Tbsp. pine nuts, toasted

Directions

  1. Combine sun-dried tomatoes and hot water in a small bowl; let stand (10 minutes). Drain and chop; set aside.
  2. Cook rice according to package directions and cool.
  3. Spoon rice into a bowl and fluff with a fork. Stir in tomatoes, feta, and next 5 ingredients (through pepper); toss well to combine. Sprinkle with pine nuts.
