Spicy, crunchy, and delicious, maque choux is a traditional corn dish of southern Louisiana that comes from the melding of Creole and Choctaw cuisine. You can serve it as a side or add a little protein like shrimp or chicken and serve it over rice to turn it into a meal.

Ingredients

  • 4 cups corn
  • 2 Tbsp. vegetable broth
  • ½ cup chopped onion
  • ½ cup chopped bell pepper
  • 1 medium tomato, diced
  • ¼ tsp. red pepper flakes
  • ¼ tsp. salt
  • ¼ tsp. pepper

Directions

  1. In a medium saucepan, cook onion and pepper in veggie broth until tender (5 minutes). Stir in remaining ingredients.
  2. Cover and cook over low heat until vegetables are tender (10-15 minutes).
