Pine nuts are a classic but expensive nut for making pesto. Macadamia nuts step in this version remarkably well. The lightly sweet and mild flavor is a perfect substitution.

Ingredients

  • 1 (9 oz.) package fettuccine
  • 3 cups fresh basil leaves
  • ¼ cup evaporated skim milk
  • 3 Tbsp. roasted macadamia nuts
  • 3 Tbsp. grated fresh Parmesan cheese
  • 2 Tbsp. lemon juice
  • ¾ tsp. salt
  • ½ tsp. freshly ground black pepper

Directions

  1. Cook pasta according to package directions, omitting salt and fat.
  2. While pasta cooks, place basil and remaining ingredients in a food processor; process until smooth.
  3. Combine basil mixture and pasta in a large bowl, tossing to coat. Serve with a tossed garden salad and a French baguette.
