Chili doesn’t get any easier than this! Enjoy this dish with your favorite cornbread or a crisp, light side salad.

Ingredients

  • 2 Tbsp. canola oil
  • 1 medium onion, chopped
  • 4 garlic cloves, minced
  • 1 cup lentils
  • 1 cup bulgur
  • 3 cups low-sodium vegetable broth
  • 2 cups canned diced tomatoes
  • 2 Tbsp. chili powder
  • 1 Tbsp. cumin

Directions

  1. Heat the oil in a large, heavy-bottomed pot over medium-high heat. Add the onions and garlic and sauté until soft (5-6 minutes).
  2. Stir in the remaining ingredients and bring to a boil. Simmer until lentils are tender (30-40 minutes).
